October 16 Cooking with Carrie from the GardenCome for a stroll thru a garden, filled with food for thought. Being frugal and the simplicities of life in a time when everyone needs to take a hard look at their waste and over consumerism. Frugality is one of the most beautiful and joyful words in the English language, and yet one that we are culturally cut off from understanding and enjoying. The consumption society has made us feel that happiness lies in having things, and has failed to teach us the happiness of not having things.
Simple Mornings Simple wholesome weekend and weekday breakfasts. Omelette's stuff with what ever you want to chop up and sauté from fresh or leftovers. I use 2 eggs for a 2 person omelette. Also add a bit of some kind of cheese and garnish with parsley and a flower. Nice sausage or bacon and whole grain toast with a fruit, here I have an avocado, but often have a papaya, ending with a rich coffee. For a solid weekday breakfast either have hot oatmeal with fruit or some mix of cold cereals with fruit and top with cinnamon. A couple slices whole grain bread with a slice cheese or homemade jam and herb tea. The day, water, sun, moon, night -- To know you have enough is to be rich.
Stuffed Spaghetti Squash Take 1 whole spaghetti squash and cook whole in 1 inch water in baking pan in oven or on stove top with lid. I do it on my wood stove top. Cook till tender. Just over an hour or more. When ready drain well and slice in half. It up to you if you want to remove the seeds I sometimes leave them. Now you can mix remaining ingredients right in shell of spaghetti squash with squash or scoop out into oiled casserole dish. Add cubed mozzarella cheese, chopped fresh thyme, basil, garlic, 1/4 tsp. Monterrey steak seasoning or just sea salt and chopped tomatoes. Sprinkle top with parmesan cheese and bake 400F for 20 mins or golden on top. Eat right out of shell as a main dish or served in a casserole dish as a side dish. Kale and red onions with oil, garlic and apple cider vinegar dressing salad and a nice whole wheat garlic bread on the side.

Thank you for reminding we are so not poor. Love even the thought of adding a flower to an omelette. Love it! And sphaghetti squash is one of my all-time fall favourites. It's like the best bakeable squash and just flavourful. Great post. Food so basic always so delicious. Take care dear one.

Its taking Joy in the Simple things that really add up to so much and letting eveything else fall to the wayside. I had to remark on the Word Simple as I to stress that so Deep in my life and try to live it each day. Coming from some complex things , events and life changing things.. Its so nice to see you used it too and that we can relate in that way.
I loved your blog . . With each photo all the way down and each quote.. Just Outstanding as always . Now I have to try and eat something. . Your cooking is Divine Carrie. . Can you come next summer and help me with Seeding and Harvest cooking. .. I been writing and looking up words as well or trying to as I go. Thank you for sharing the Fruits of your labor of Love in my Guestbook. . I know the hard work that went into each jar the was put together canned and progessed. Also love the Apples. I did some photos of apples as well . Mine are crap apples. I need to get an ablum of fruit up soon. Dear Carrie, thanks to you I have learnt a new english word: frugality. No wonder that I haven't heard it yet. In this society full of waste and over consumerism. And the US is a great example of it, sorry to say.
But your lovely blog with wisdom quotes and lovely photos of food and garden returned me to enjoy the simple life. I really love your blue table with sunflowers for your breakfast and how the morning sun gets through the window. It must be pleasure to eat breakfast at your house. Up until about 100 years ago a person ate what they could prepare. Make their own cheese or butter/milk, homemade bread, grind own flour, butcher own pig or steer, milk the cow....Not many people could do that any more and what you lay out is too much like work for some of the younger generation...now for some sourdough biscuts an gravy.
